Checking in once again…

Hi everyone. I know it's been a while since my last post. Life has been busy around here. I kept intending to write a post but struggled to find time to sit and begin. My son and I have been helping my hubby out at work with some things; so that slowed me down too. I'm glad I was there to help him because he was very grateful to get a lot done in half the time it would have taken him if he had done it by himself. I'm excited for Father's Day to get here. We love to bless him and show him how much he means to our family.

Before that day comes I wanted to take a moment to reflect and share what he helped our son to do for me for Mother's Day this year. My son kept saying for several months that he had never given me flowers. He said he wanted to get me some for a gift sometime soon. He also kept hearing me talk about wanting to try something from Edible Arrangements for several years now.

For Mother's Day, he surprised me with this lovely bouquet of Tulips and the yummy (and pretty) flower arrangement from Edible Arrangements. I had to snap pictures to have as a memory before the Tulips died and my edible flowers were all eaten 😊

I also tried something new. I did what's called an Egg Fast. It's a great reset if you have enjoyed too many holiday treats or have stalled in losing weight. It lasts anywhere from 3-5 days.  I have done a few Egg Fasts so far. I was really shocked I could stand eating nothing but eggs each day. I read so many Egg Fast tips from Ketogenic Woman. She has a whole guide where she shares different recipes, answers questions, and even talks you through how to transition back to normal eating after you are done. 

Some of the things I tried were Egg Shake. Let me stop to tell you about that shake. I was about to pass up on consuming that. After all, it has raw eggs in it. The thought was making me gag. She has a page where she talks all about people's concerns. I was brave enough to finally give it a try. I was so shocked to actually like it. You couldn't tell the eggs were in there. I could drink this stuff every day in place of powdered protein shakes. Other meals I tried were pancakes, cheesy scrambled eggs, deviled eggs, waffles (Chaffles), and lemon bars (the round ones you see).

Here are more meals I tried. Just like the egg shake, I thought having a raw egg yolk in my black coffee would be disgusting. Well after trying it there was no egg taste and it helped give me some creaminess that I would get when I used heavy cream. I also had fried boiled eggs with yum yum sauce, egg noodle Alfredo, Egg "mac-n-cheese", egg drop soup, and egg salad (not pictured). Eating different things really helped to keep this interesting to get through each day of the fast. It would have been boring if I had to stick to eating only boiled eggs. I was happy I did break through my weight loss stall and am back on track.

Spring is almost over. It has been cooler than normal this time around. We have had some very warm temps just not as warm as it was last year. Do you see my new pillow covers in the pic? I love these velvet apple green pillow covers I bought to go with my Spring decor. I bought them late so I only had them on for a month. Next week I plan to start switching out my decore to welcome in the next season. I will definitely replace those Spring covers with the new ones I ordered for the Summer. I love the ones I found. I should share a pic of those sometime this summer.

Last year I shared my 1 year health journey and I'm still on that journey. I have stuck with my plans and continue to lose weight. I was looking back at last year's calendar to see when I started doing OMAD (One Meal A Day). It is coming upon a year real soon. I actually stuck with it that long. I will share with you my progress from then up until now. My next post will be an update on my progress so stay tuned. I still do my weekly meal planning. This year I decided to stick with rotating through some of the past meals that I posted on here. The only difference is that I have switched out all of the high-carb foods from those meals to fit my current way of eating. Here are the menus from May 2021 and June 2021 in case you missed them.
