Easy Crockpot Pulled Pork

Hello dear readers. It's been a while but you know how life can get really hectic busy. I hate that I haven't gotten the new house together like I planned. I have been helping my hubby here and there with work since Spring. He has worked in I.T. for many years and has a very demanding job where he currently works. Sometimes he asks me to travel with him to help out when he's on the road. I don't mind and I'm glad I'm able to be there for him. He likes my company and it helps us be able to spend more time together because he hates when he's gone from home a lot.

Anyhoo I was looking way back through my list of blog posts and noticed this recipe had been sitting in draft mode for over a year. Say what???? I don't know how it got pushed back and forgotten. I decided it was time I get it finished and posted. We have this a lot throughout the year when it goes on a good sale.


Easy Crockpot Pulled Pork

Ingredients:
4-5 lbs. bone-in pork butt
BBQ rub (I use my own seasoning. See below.)
1 medium onion, sliced or chopped
1 cup chicken or bone broth

Directions:
Clean the pork roast and pat dry with some paper towels. Add as much BBQ rub (or my season below) to both sides of the meat. In a lightly greased 6-quart slow cooker, place the onion at the bottomPlace pork roast on top. Cover and cook on LOW setting for 8-10 hours or until fork-tender. Take out pork and discard all but 1/4 cup of the liquid.  Remove the bone and shred the meat. Now add the meat back to the slow cooker to toss in the reserved liquid. It's now ready to use in various ways or separate into meal portions to freeze for later.

Pulled Pork Season
1.5 Tbsp. Paprika
1/2 Tbsp. Onion Powder
1/2 Tbsp. Garlic Powder
1/2 Tbsp. Black Pepper
1/2 Tbsp. Sea Salt
1 tsp. Mustard Powder

Note: If you want to make BBQ Pulled Pork, I suggest using 3-4 lbs. of boneless pork butt/roast. After cooking remove the meat and leave 1/4 cup of broth. Now just shred the meat and add it back to the slow cooker. Combine a 12 oz. bottle of your favorite BBQ sauce, 2 Tbsp. honey (less or more according to your taste), 1 tsp. Liquid Smoke, and about 3 dashes of hot sauce in a bowl or glass measuring cup. Pour over roast, toss meat to coat, and cook for 30 minutes on LOW to warm up the sauce. Serve over your choice of buns. It is delicious topped with cole slaw too.
