Pork and Sweet Potato Stew
Ingredients:
2-3 cups leftover pulled pork (from a pork butt roast. You can also use leftover cubed pork from a loin roast too)

2 Tbsp. EVOO
1 large onion, diced
2 garlic cloves, minced
8 oz. sliced mushrooms (optional- I left it out this time)
2 cans (14.5 oz. each) of Italian stewed tomatoes
4 cups sweet potatoes (cut into 1-inch cubes)
2 cups chicken broth
16 oz. bag of frozen mixed vegetables (can also use frozen stewed vegetables)
1 tsp. salt
1/2 tsp. pepper
2 tsp. dried thyme
2 tsp. paprika
2 Tbsp. Cornstarch (or flour works too)
Directions:
In a skillet sauté onions, garlic, and mushrooms. In a 6-quart sprayed slow cooker put meat on the bottom and sprinkle cornstarch on top. Add sautéed vegetables, tomatoes, cubed sweet potatoes, broth, mixed vegetables, and seasonings. Cook on LOW for 6-8 hrs.

Note: This is tasty with apple or even pumpkin butter stirred in each bowl right before serving. Here is another version I've made.
