Ingredients:
2 lbs. whole baby carrots (or regular carrots peeled and sliced to 1/2" thick rounds or sticks)
1/4 tsp. salt
1/2 cup butter
1/2 cup granulated sugar or brown sugar- packed (could replace with 1/3 cup honey or pure maple syrup)
1/4 tsp. ground nutmeg
1/4 tsp. salt (or to taste)
ground pepper (dash)

Directions:
Place carrots in a pan or skillet and cover with 2" of water. Add in 1/4 tsp. salt. Bring to boil, reduce heat to medium, and boil gently for about 15-20 minutes until carrots are crisp-tender. Drain and set aside. In the same pan or skillet, heat butter, brown sugar (or sweetener of choice), nutmeg, salt and pepper until melted and bubbly. Immediately pour the carrots back in. Stir to coat. Cook about 5 minutes or til glazed. Serve as a side dish.
