Holiday Snickerdoodles

During the holidays if you have stocked up on boxed cake mixes from sales, here is an easy way to make Snickerdoodles. I will share 2 ways to enjoy them for Christmas time.


Easy Holiday Snickerdoodles

Ingredients:
1 box of white or yellow cake mix
2 eggs
1/3-1/2 cup oil (melted butter would work too)
1 tsp. vanilla extract

Topping:
2 Tbsp. green decorating sugar
2 Tbsp. red decorating sugar
2 tsp. ground cinnamon

Directions:
Preheat oven to 350 - 375 degrees. Combine first four ingredients in a large bowl. A cookie like dough should form. In a smaller bowl combine the green sugar with 1 tsp. of cinnamon. In another small bowl combine the red sugar with the other tsp. of cinnamon. We used a Tbsp. measuring spoon to scoop out dough and rolled into balls. Roll the ball in one of the sugar cinnamon mix. Lay on parchment lined cookie sheet (I used a baking mat instead) and repeat making balls until you have filled up your cookie sheet (make sure they are at least 1" apart). Flatten the balls a little and bake for 8-10 minutes. Place on cooling rack and finish the process with any leftover dough. Makes around 34 cookies.


Egg Nog Snickerdoodles

Ingredients:
1 box of white cake mix
3 eggs
1/2 cup butter (melted)
1/4- 1/2 tsp. ground nutmeg

Glaze:
1-2 cups Powdered Sugar
2 Tbsp. Egg Nog
pinch of Nutmeg

Directions:
Preheat oven to 350 or 375 degrees. Combine first 5 ingredients in a medium bowl. Stir together to thoroughly mix. My batter was a little softer than expected so I let it sit for a minute or two. You will notice it gets thicker. On a parchment lined cookie sheet (I used a baking mat instead)put spoonfuls of dough 1 inch apart until filled up. If you desire try to flatten your dough a little. My family likes theirs puffy so I didn't bother doing that. Bake cookies 8-10 minutes but no more than 12 minutes until browned on bottom. Let sit a minute then remove cookies and place on a cooling rack to finish cooling off. Continue steps above until all the dough is used.

Combine all ingredients for glaze and drizzle over cookies. Let sit to harden then enjoy!
